I have a rookie team team too, so you can take this answer with a grain of salt.  My kids started off building a model using the instructions that came with the EV3 kit.  Then as they have encountered problems with model, they modified the design from that starting point.

Is there a specific basic way for my teams to build their robot? Is there a required shell to use is what i am unsure about? Any help is welcome. Thank you.
