As long as the swapping out the sensors does not break the rule of the max number of sensors or motors brought to the table, you can switch them out.   You may only bring a max of 3 motors and any combination of 4 sensors.

      They can not be marked, except with lego created stickers, "properly" applied.   We had some lego stickers that came in our retail set, and they are on the sensors and bot with no issue.

You can remove the markings with rubbing alcohol.
