I haven't started on any kits yet this year, but I've done many of
them over the past few years.
With the exception of extra "tiny" pieces (black connectors and really
small parts), I have only had 1 piece maximum missing/defective from
around 1 in 20 kits.  (But yes, there have been a few confirmed
errors--3 for me out of close to 60 kits.)

In almost all cases, when I find something missing, it's because I
made a mistake earlier, and put the wrong piece into a model.  In
other words, my experience has been that LEGO quality assurance during
packing is better than mine for assembly...

If you do confirm that a piece is incorrect or missing, you can
contact LEGO education with the piece number and your shipment number,
and they will send you a replacement.
