I like this site, however I think that their programming examples are 
still for the RCX.

For building, I like the Constructopedia that I found somewhere on or 
from the lego.com site.

I learned the programming from the tutorial that comes with the NXT.  
There are also videos online.  I find that the videos drive me insane to 
go so slowly.  The kids I have worked with seem to react the same way.  
Most do not have the patience to sit through all the videos.

I like the following books:

The Unofficial Lego Mindstorms NXT Inventors Guide by Davide J. Perdue
Lego Mindstorms NXT-G Programming Guide by James Floyd Kelly

I really liked the old version of this book with RCX; it goes deeper 
than the others.  I haven't purchased the NXT edition, but I probably 
will get it this season:

Building Robots with Lego Mindstorms NXT by Mario Ferrari
