At an FLL tournament it is best if team members do things themselves to the greatest extent possible. Otherwise it gives the impression that the team members don't understand things and did not do the work themselves.
In particular, for sensor calibration:
Rule 17 permits calibration of light sensors before the match begins, as part of robot preparation.
Rule 4 states that "At the tournament, only TWO team members at a time are allowed right up at the competition table except during repair emergencies." Rule 4 also allows "different [team] members to tag in or out as desired at any time."
Specifically, only team members are allowed to operate and handle the robot, which includes calibration. So the answer is "no, a coach wouldn't be expected to do calibration."
During a match (and at other times), Coaches are there to support and root for the team, and help them get places on time, handle registration paperwork, and so on. They wouldn't be expected to be directing the team to do things or doing things that a team member could do.
