Andrew,
I looked at peeron.com and the educational kit 9797-1 contains 3 NXT to RCX connectors(part # x1676).  Combining these with 2 NXT motors and the NXT brick will let you snap between motor number 3 and motor number 4 on the field.  If you do not have these search for a seller at brickmaster.com.

This sounds like a “teaching” opportunity.  Treat this as a real world engineering challenge – how can you redesign the robot so that one of the standard cables will do the job?  By imposing a constrained set of materials (standard LEGO parts) the contest enforces real world engineering limitations that must be accommodated.

The rule about what you can use is:

Rule 4--Equipment
  * EVERYTHING - Everything you use in the competition area directly or indirectly for strategy (mission-related activity) must be made entirely of LEGO-manufactured elements in original factory condition.

So, if you can find an appropriate adapter that is manufactured by LEGO, then it would be allowed.  I don't know if there are any such items.  I did a quick check at BrickLink, and didn't see anything right away.  I have seen some very long wires, which might serve the same purpose.  Be careful, though--sometimes teams have to be creative to keep excess wire from spilling away from the robot and messing things up!

Our team would like to use a forth motor but the connectors are deep within the bot.  Would it be allowed for my team to use an adapter to connect a wire coming from the NXT 2 controller to allow connection from the top of the bot during the tournament?  I was considering female-to-female connector that has one line coming from the NXT 2 to the top of the bot.  The connector would allow a quick connect/disconnect during the tournament since there are only three ports available with this controller but 4 motors are now allowed during the tournament.
