A team MUST use the two people supplied as mission models at the competition table in order to score all the points for the Apprenticeship mission.
A team MAY use other LEGO-manufactured people as part of their apprenticeship model.

Here are the details:
The Apprenticeship mission notes that you are binding the mission models, which normally isn't allowed.
Update 25 confirms that you must use the people supplied by the tournament to score points.
Update 30 says that you may other other people on your model, as long as they aren't duplicates of the mission models.
Update 7 clarifies that you add the mission model people to your model after arriving at the table.
Rule 18 doesn't allow you to bring duplicates of mission models to the table if they could confuse scoring.
