Elvina,
I’ve used the past season’s mats to teach newcomers, and lend to students that want to learn and practice at home in the preseason timeframe.
This is a great help in learning simple moves like line following, navigation, and sensing the environment. In one of my seasons of coaching I reached out to other former coaches and collected some old mats for that purpose. It worked very well.
I’d also suggest saving all of the LEGO pieces for both robot building and making accessory holders, home-base guides, etc. At the beginning of my first coaching season I inherited a great collection of LEGO parts that were a great help in future seasons.

Is there any use for previous challenge mats? My school is purging and cleaning up, and I've been instructed to toss the old challenges. Students are helping me sort any EV3 friendly pieces back into our collection.
Is there any use for the old mats while teaching beginners?
Thanks,
Elvina
