John,

I agree with Eric, do not skip the project. If you skip the project, not
only are you losing out on 100 points but your students are missing the
opportunity to learn about food saftey. I have found that my students have
learned a great deal about this topic (food saftey), which is one of the
goals of the competition!

Addressing your second point, please take your students a tournament! This
experience alone with motivate them to want to come back next year and
compete! I hope this helps.
