I have assembled two of this year's kits so far and have not had any missing pieces, though I have had a few of the very small parts as extras.  My experience over the years, like Steve's, has been that most of the time when I find there are missing parts, it's because I had a mistake in the assembly. 
 
That being said, from the probably 120 kits I've either assembled or verified over the years, there have been a few missing parts (I had 2 parts missing from the 30 kits I was responsible for last year) and Lego has been very good about getting them to me right away.  It's very easy to do - just go to the Lego website and at the bottom of the page is a link for "missing parts".  Put in the kit number (from the box) and pick out which parts are missing and they will mail them to you.

I haven't started on any kits yet this year, but I've done many of
them over the past few years.
With the exception of extra "tiny" pieces (black connectors and really
small parts), I have only had 1 piece maximum missing/defective from
around 1 in 20 kits. (But yes, there have been a few confirmed
errors--3 for me out of close to 60 kits.)

In almost all cases, when I find something missing, it's because I
made a mistake earlier, and put the wrong piece into a model. In
other words, my experience has been that LEGO quality assurance during
packing is better than mine for assembly...

If you do confirm that a piece is incorrect or missing, you can
contact LEGO education with the piece number and your shipment number,
and they will send you a replacement.
